Strawberry Cake
If you haven’t guessed from the recipes I’ve listed already, I love strawberries. My Mom has been making this cake for my birthday every year for over a decade.
For the cake, you need:
1 pkg. white cake mix
1/2 c. water
4 eggs
3 tbs. flour
1/2 c. oil
1 3-oz. pkg. strawberry Jello
8-oz. frozen strawberries
For the frosting, you need:
1 stick butter
1 box powdered sugar
1 tsp. vanilla
8 oz. frozen strawberries
For the cake:
In a large bowl, combine cake mix and water. Beat in eggs, one at a time. Add flour, oil, and Jello; beat until well blended. Fold in strawberries. Pour batter into a well-greased 9x13 pan and bake at 350 degrees for 25 minutes.
For the frosting:
Cream butter and gradually add powdered sugar (for a stiffer frosting, add 3 tbs. flour), beating until creamy. Add vanilla and strawberries. Beat until well blended. Frost cake when completely cool. Keep cake refrigerated.
TIP: This recipe also works perfectly as cupcakes!!
